This is a one pot meal prepared with sautéed chicken and mushrooms in white sauce served over steamed rice.
Serves: 3
INGREDIENTS
250 gms boneless chicken cut into bite size pieces
200 gms button mushrooms, stalked removed and quartered
2 tbsp all purpose flour/ Maida
50 gms butter
A pinch of salt and pepper
3/4 cup milk
11/2 cup steamed rice
1/2 tsp mixed herbs
1/4 tsp chilli flakes
1 cup grated cheese
METHOD
Marinate chicken cubes with salt and pepper.
Heat 1tbsp butter, add the marinated chicken and
stir fry till 1/2 done.
Add the mushrooms. Sprinkle salt and pepper.
Stir both till cooked but crunchy.
Sprinkle mixed herbs and chilli flakes.
Remove from fire.
White sauce
Heat butter in another pan add the maida, salt and pepper.
Sauté for 2-3 mins on low heat.
Add grated cheese.
Remove from fire, Add milk and stir well to form the sauce.
Taking care to avoid lumps.
Now add the cooked chicken and mushrooms to this.
Arrange the steamed rice in a serving bowl.
Add the chicken to white sauce.
Cover with grated cheese
Sprinkle herbs and chilli flakes.
Bake in an oven for 5-7 min or till the cheese melts.
Serve hot with some soup.
Or just by itself.
NOTES: Mushrooms are ideally cleaned well by tossing them in wheat
flour and then washed under running water.
