BHINDI DO PYAZA

Okra is a vegetable rich in many nutrients, and when prepared with onions and spices becomes a delicious dish.


Serves: 4


INGREDIENTS

  • 500gms Okra/ Bhindi sautéed in 2 tbsp oil, removed and kept aside.

  • 2 large onions cut into 8 pcs

  • 2 medium tomatoes cut into 8 pcs

  • 1/2 tsp red chilli powder

  • 3/4 tsp coriander powder

  • 1/2 tsp salt or to taste

  • 1 tbsp ginger julienne.

  • 1/4 cup chopped coriander leaves.

  • 2 -3 tbsp oil.

METHOD

  1. Heat 2tbsp oil, in a wok, sauté the bhindi for 10 mins.

  2. Remove into a dish.

  3. Now fry the onions, till transparent.

  4. Add the tomatoes. And julienne ginger.

  5. Sauté for 5 mins, Add the coriander, chilli, powder.

  6. Add the bhindi. Cover the wok with a lid for 5 mins.

  7. On low to medium heat.

  8. Let it cook, it should be crisp but cooked.

  9. Add the salt ( we don't add salt before as the bhindi will turn mushy)

  10. Add half the coriander leaves.

  11. Remove into a serving dish, garnish with rest of the coriander leaves.

  12. Can be had as a side dish with , paratha, roti, naan etc.

NOTE: You may add 1/4 tsp Amchur or dry mango powder if you

want extra tanginess.
