Okra is a vegetable rich in many nutrients, and when prepared with onions and spices becomes a delicious dish.
Serves: 4
INGREDIENTS
500gms Okra/ Bhindi sautéed in 2 tbsp oil, removed and kept aside.
2 large onions cut into 8 pcs
2 medium tomatoes cut into 8 pcs
1/2 tsp red chilli powder
3/4 tsp coriander powder
1/2 tsp salt or to taste
1 tbsp ginger julienne.
1/4 cup chopped coriander leaves.
2 -3 tbsp oil.
METHOD
Heat 2tbsp oil, in a wok, sauté the bhindi for 10 mins.
Remove into a dish.
Now fry the onions, till transparent.
Add the tomatoes. And julienne ginger.
Sauté for 5 mins, Add the coriander, chilli, powder.
Add the bhindi. Cover the wok with a lid for 5 mins.
On low to medium heat.
Let it cook, it should be crisp but cooked.
Add the salt ( we don't add salt before as the bhindi will turn mushy)
Add half the coriander leaves.
Remove into a serving dish, garnish with rest of the coriander leaves.
Can be had as a side dish with , paratha, roti, naan etc.
NOTE: You may add 1/4 tsp Amchur or dry mango powder if you
want extra tanginess.
