Chana /chickpea bhatura is one of the most tempting and flavorful dishes. It is a combination of chickpea curry and fried fermented bread known as bhatura.
Serves: 3 - 4
INGREDIENTS
CHANA MASALA
1 cup Kabuli chana / chickpeas
1 onion
1 tsp Ginger chopped
1 tsp Garlic chopped
1 tsp Jeera
1/4 tsp Methi seeds
1/4 tspTurmeric pd
2 Cardamom
2 Cloves
1/2 inch Cinnamon
1 tsp Coriander pd
2 Tomatoes
Few Coriander leaves
Few Curry leaves
1/4 tsp Mustard seeds
2 tbsp Oil
BHATURA
2 cups Wheat flour
1 tbsp rava / sooji / semolina
1 tsp sugar
Salt to taste
½ tsp baking powder
¼ tsp baking soda / cooking soda
2 tsp oil
1 cup curd
Oil for deep frying
METHOD
Chana masala
Soak chana / chickpea overnight.
Pressure cook chana with ginger, garlic, turmeric pd, chilly, coriander pd, cinnamon, cardamom, cloves and onions for 30 mins.
Heat oil in a pan add mustard seeds, curry leaves, chopped or pureed tomatoes.
Fry well and then add boiled chana /chickpea.
Season with salt and cook well.
Garnish with coriander leaves.
Bhatura
In a large mixing bowl take wheat flour
Add rava, sugar and salt.
Add baking powder, baking soda and mix well.
Add oil and rub with the flour.
Add curd and knead the dough.
Knead and punch the dough well for atleast 5 minutes.
Grease the dough with some oil.
Cover the dough with a moist cloth and rest for at least 2 hours.
Roll the dough with your palm and cut into medium sized balls.
Roll them evenly into slighty thicker circles using a rolling pin.
Heat oil in a wok or kadahi
Fry bhatura till done. Drain them well.
Serve bhaturas with chana /chickpea curry, sliced onions and lime.
