CURRIED ALOO GOBI

A simple, easy to make cauliflower and potato curry,

light and delicious. Goes well with rice, rotis or bread.


Serves : 4


INGREDIENTS

  • 1 medium cauliflower cut into big florets

  • 2 medium potatoes quartered.

  • Wash and soak both in turmeric and salt water for 15 mins. Strain and fry in 2tbsp oil till golden brown. Remove and keep aside.

  • 1 medium onion half sliced

  • Grind together into paste (11/2 tsp ginger garlic paste

  • 1 tbsp tomato puree or half tomato grated.

  • 2tsp coriander powder

  • 1/2 tsp cumin powder

  • 1/2 tsp turmeric powder

  • 3/4 tsp Kashmiri chill powder

  • 1/2 tsp salt or to taste. )

  • 1/4 tsp garam masala.

  • 3 tbsp oil, here i used mustard oil.

  • 1/2 tsp sugar.

  • 1/4 tsp cumin seeds

  • 2 small bay leaves.

  • 1/2 cup chopped coriander leaves.

  • 2 cups hot water.

METHOD

  1. Heat oil, season with cumin seeds and bay leaves.

  2. Add 1/2 tsp sugar and caramelise to golden.

  3. Add the sliced onions

  4. Fry to golden brown.

  5. Add the masala paste and fry well till oil separates.

  6. Add the fried Cauliflower and potatoes.

  7. Fry well, till the masala is well coated.

  8. Add half the chopped coriander leaves and mix well.

  9. Sprinkle garam masala.

  10. Add the hot water, bring to a boil.

  11. Simmer till the veggies are cooked but firm.

  12. It should not be overcooked.

  13. Remove from fire.

  14. Pour into a serving bowl.

  15. Garnish with rest of the coriander leaves.

  16. Serve hot.
