DAHI BATATA PURI

Dahi batata puri is a snack made from deep fried puris stuffed with potatoes, sweet and green chutneys, curd and sprinkled with chilly pd, chaat masala and roasted jeera pd. It is further topped with chopped onions, coriander leaves and fine sev.



Serves: 4


INGREDIENTS

  • 1 packet readymade puris

  • 2 large potatoes

  • Salt to taste

  • 11/2 cup coriander leaves

  • 1 green chilly or to taste

  • 1 tsp freshly roasted jeera pd

  • 1 tsp amchur pd / lime / tamarind

  • Small piece ginger for chutney (optional )

  • 1 cup Jaggery

  • 11/2 cup tamarind pulp

  • 1/4 tsp Saunf ( fennel seeds )

  • 2 onions

  • 1 tomato (optional )

  • Fine sev for topping

METHOD


GREEN CHUTNEY

  1. In a blender, add chopped fresh coriander leaves, green chilly and ginger (optional )

  2. Add 1 or 2 tsp lemon juice / amchur pd, ½ tsp roasted cumin powder and black salt / sea salt.

  3. With some water blend all the ingredients till smooth. Check the seasoning and add more salt or amchur / lemon juice if required.




TAMARIND CHUTNEY / IMLI CHUTNEY

  1. Deseed and soak tamarind in a a cup of hot water for 10 mins squeeze and keep aside the pulp

  2. In a saucepan add jaggery, tamarind pulp, salt, chilly pd, saunf seeds and boil till it thickens on slow flame stirring occasionally. Keep aside.




FILLING FOR PURIS

  1. Wash and boil the potatoes in a pressure cooker for 5- 10 min or till done

  2. Peel and mash the potatoes.

  3. Finely chop onions, tomato (optional ) and coriander leaves keep aside.

  4. Add 1 chopped onion, coriander leaves, salt and 1/2 tsp roasted jeera to the mashed potatoes and mix it well. Keep aside.

  5. Beat the curd well with some black salt /salt



SERVING DAHI BATATA PURI

  1. Take 6 puris in a serving plate make a hole and stuff it with potato mixture.

  2. Add beaten curd in each puri

  3. Top puris with fine sev

  4. Drizzle 1 tsp sweet chutney, 1/2 tsp green chutney over it .

  5. Add some more curd over this.

  6. Sprinkle some chilly pd, roasted jeera pd, salt chaat masala (optional ) and some more chopped onions.

  7. You can add some more fine sev and garnish with chopped coriander and chopped tomato ( optional )

  8. Serve immediately or else it becomes soggy.
