Rasam is a sour and spicy stock traditionally prepared using whole red chilies, black pepper, cumin seeds / jeera, tomatoes, garlic and other spices as seasonings.
INGREDIENT
4 - 5 tomatoes
6 - 7 small cloves garlic
1 tsp whole jeera / cumin
2 - 3 whole red chillies
1/4 tsp turmeric pd
Few tender curry stems with leaves
Few coriander stems with leaves
1 tsp black pepper corns
1 tsp salt
3 cups of water
METHOD
Roughly chop tomatoes.
Grind together whole pepper, red chillies, curry leaves, coriander leaves, garlic cloves, salt, cumin seeds into a coarse paste.
Remove and keeep aside.
Grind tomatoes into pulp and keep aside.
Heat oil in a pan.
Add mustard seeds as they crackle add the coarse paste and stir for a while.
Add turmeric pd and tomato pulp.
Bring it to a boil.
Taste the rasam and adjust the salt and chilly.
You can add some chilly pd if you want to make it more spicy.
Cook for 5 mins and transfer it into a serving dish
Serve it with steamed rice.
You can also use it as a very soothing hot drink for cold.
