An excellent easy to make side dish
with rice/ pasta preparation. Or simply as a snack.
Serves: 2 - 3
INGREDIENTS
3 large potatoes, firm boiled and peeled and cut into wedges
1/2 tsp mixed herbs
1/2 tsp coarsely crushed pepper
1/2 tap salt or to taste.
3 tbsp oil for frying.
METHOD
Toss the potatoes with salt, pepper and herbs.
Heat oil in a pan and shallow fry the potato wedges in batches, till crisp.
Remove on to a tissue to drain excess oil.
Transfer to a serving dish.
Serve hot.
