HERBED DELLIE POTATOES

An excellent easy to make side dish

with rice/ pasta preparation. Or simply as a snack.



Serves: 2 - 3


INGREDIENTS

  • 3 large potatoes, firm boiled and peeled and cut into wedges

  • 1/2 tsp mixed herbs

  • 1/2 tsp coarsely crushed pepper

  • 1/2 tap salt or to taste.

  • 3 tbsp oil for frying.


METHOD

  1. Toss the potatoes with salt, pepper and herbs.

  2. Heat oil in a pan and shallow fry the potato wedges in batches, till crisp.

  3. Remove on to a tissue to drain excess oil.

  4. Transfer to a serving dish.

  5. Serve hot.

NOTE:

You may keep the potato with the peel if you wish.
