Kheema / minced meat cutlets with spices and potatoes. The boiled mashed potato balls are filled with spicy kheema /mince then dipped in egg and rolled in bread crumbs and shallow fried.This makes a perfect snack / starter and can be enjoyed with tomato ketchup or green chutney.
Serves: 6
INGREDIENTS
1/4 kg mutton kheema / mince
4 - 5 large potatoes
2 big onions
1 green chilly
A handful coriander leaves
A handful mint leaves
1 lime
1 tsp ginger - garlic paste
1/4 tsp turmeric pd
1/2 chilly pd
1 tsp salt or to taste
Oil for frying
2 cloves
2 cadamom
Small piece cinnamon / a pinch pd
3/4 tsp whole jeera / cumin
2 eggs
METHOD
Wash kheema in a strainer and drain it well.
Pressure cook kheema with ginger - garlic paste, salt, turmeric pd, chilly pd, cloves cardamom and cinnamon for 5 mins after first whistle. Open when it cools and dry up the kheema completely. Remove the whole spices and discard.
Boil whole potatoes with water in a pressure cooker till done ( 5 -10 min )
Heat 1 tsp oil in a pan add finely chopped onions and fry till transparent add completely dried up kheema and mix it well on high flame.
Add chopped coriander and pudina / mint leaves chopped green chilly and squeeze a lime. Remove in an open plate and cool it down.
Taste and check for salt and chilly. You can add more if you want.
Mash the potatoes / grate boiled potatoes while they are still warm, add little chilly pd, some salt and whole jeera mix it well and make a dough.
Make bread crumbs by grinding fresh bread and keep aside.
Beat eggs with little salt and chilly pd keep aside.
Take a small ball of potato mixture flatten it in your palm and fill it with kheema mixture and close it nicely to form a round ball and then flatten it into a patty.
Dip this patty in egg mixture and roll it in bread crumbs and keep aside.
Make them all one by one and refrigerate in a box for 15 - 20 mins.
Shallow fry them as and when required and serve as a snack with sauce or green mint chutney .
NOTE:
You can also store them in the freezer in an airtight freezer box for later use.
Make sure you layer them with freezer paper in between or else they get stuck to each other.
For quick frying you can microwave these frozen patties for 1 min and then shallow fry in the frying pan.
