Malpuas are traditional Indian sweet dish.
They are small pancakes soaked in sugar syrup.
Serves: 4
INGREDIENTS
11/2 cup Flour/ Maida
1 cup Milk
A pinch of cardamom powder
1/4 tsp pounded fennel/ somf seeds
1/4 tsp baking powder.
Oil for frying.
SUGAR SYRUP
11/2 cup sugar
1 cup water
METHOD
TO MAKE SUGAR SYRUP
Heat sugar and water in a wok till you get a thickish syrup
But not to 1 thread consistency.
TO MAKE MALPUA
Mix flour, milk, cardamom, fennel, baking powder together to a thickish batter.
Keep aside for 20 mins.
In a pan make 3-4 inch dia thick pancakes.
Fry with little oil.
Remove in a dish.
Similarly fry all the pancakes.
Arrange in a serving dish.
Now pour the prepared syrup over this.
Keep aside till the Malpuas soak the syrup
Serve either cold or warm.
You may garnish with chopped nuts if you wish.
NOTE:
You can add a tsp of milk to the sugar syrup to remove
impurities. It froths to the top and can be removed with a spoon.
You can also add a few strands of saffron to the syrup if you like.
That is absolutely your choice.
