Moringa cooked with onion, tomatoes and spices. Served with flat bread or steamed rice.
INGREDIENTS
1 Moringa stick
1 medium potato
2 onions
3 Tomatoes
1/4 tsp Chilly pd
1/4 tsp Turmeric pd
1 tsp Corriander pd
Salt to taste
1/2 tsp Jeera
1/2 tsp Ginger garlic paste
2 tbsp Oil
Corriander leaves
METHOD
Clean and cut moringa into finger size pieces.
Cut potato into 8 pieces.
Roughly chop onions and tomatoes.
Heat 1 tsp oil in a frying pan add jeera.
Add onions and tomatoes and cover the lid and let them broil till they soften.
Cool and put in the blender and puree them.
Heat oil in a pressure cooker add ginger garlic paste followed by chilly pd, turmeric pd, corriander pd and onion tomato puree.
Sautee well.
Add moringa and potato coat them well with masala.
Add 2 cups of water and pressure cook for 2 whistle.
Serve with steamed rice and salad.
