NARAM KHICHDI - A ONE POT MEAL

The traditional naram khichdi is made using split moong dal / green gram, which is a rich source of protein and fibre and helps in keeping you full for longer duration. This dish is an easy to make - easy to digest, healthy comfort food.



Serves: 2 - 3


INGREDIENTS

  • 1 cup rice / brown rice

  • 1/2 cup split moong dal / green gram with skin

  • 1/4 tsp turmeric pd

  • 1 tsp jeera

  • 1 onion

  • 1 green chilly

  • 1 tsp salt or to taste

  • 2 tbsp oil

  • Pure ghee

  • 4 glasses water.

  • Few mint leaves

  • A piece of cinnamon


METHOD


  1. Dry roast spilit moong with skin.

  2. Wash and soak dal and rice for 15 min if you have time or else you can cook without soaking.

  3. Pressure cook dal and rice, turmeric pd with sufficient water may be 3- 4 glasses ( as it absorbs a lot of water to cook) for 5 min after the first whistle on slow flame or till it become soft and mushy.

  4. Add salt and mix it well.(dissolve salt in litttle water and then add so that it mixes thoroughly)

  5. Taste and check the salt, add more water if it is too thick and cook for few more mins.

  6. In a small tadka / seasoning pan heat oil add jeera, cinnamon stick, green chilly and sliced onion.

  7. Fry till onion turns golden brown.

  8. Add chopped mint / pudina leaves and chopped coriander.

  9. Remove and put this seasoning into the khichdi (mixture of rice and dal )

  10. Serve this moong dal khichdi with a dollop of ghee on top and dahi raita, kadi, roasted papad and pickle.

  11. Serve hot with kheema / mutton mince if you are a non - vegetarian.



NOTE:

You can also make this with your leftover cooked rice ( 3 cups cooked rice + 1/2 cup raw and roasted moong dal with skin )

If you have whole moong then you can pulse it in the mixie and split it into small pieces but do not powder it.

You can also add vegetables and spices of your choice.
