Marmalade is a fruit preserve made from the juice and peel of oranges boiled with sugar and water. In this version we have added jaggery and reduced the quantity of orange zest to make it less bitter, but if you like it more bitter than you can add more of orange zest.
Serves: 4
INGREDIENTS
2 cups orange juice
1/2 cup water
1 cup jaggery
3/4 cup sugar or to taste
1 lime
2 tbsp orange zest / rind
METHOD
Squeeze the juice of the oranges and lemon
Peel out thin peels of oranges with a potato peeler. Make sure you don't use white portion underneath the bright orange peel which makes it bitter. Thinly chop them up into thin strips.
In a thick bottomed pan boil the juice along with water and orange zest over a moderate flame.
Cook juice until the liquid has evaporated by 1/3.
Add jaggery and sugar and continue stiring.
Boil until setting point is reached.
Remove and store in sterlised glass bottles.
Cool and refrigerate.
Serve with bread and butter
