PALAK POHA / RICE FLAKES

Poha is flattened rice. Rice is parboiled before flattening so that it can be consumed with less cooking. It gives a perfect and energetic start to the day.This dish cooked with onions, potatoes, peanuts and spinach is packed with iron and carbs.


Serves: 2 - 3


INGREDIENTS


2 cups medium rice flakes /poha/brown poha

  • 1 medium onion

  • 1 potato

  • 2 - 3 green chillies

  • 1/4 tsp jeera

  • 1/4 tsp turmeric pd

  • 1/2 tsp salt or to taste

  • 1 small tomato

  • 2 tbsp peanuts

  • 2 -3 tbsp oil

  • Few curry leaves

  • A handful of baby spinach /palak

  • 1 lime ( optional )


METHOD


  1. Always take medium flakes. Avoid thin flakes.

  2. Wash them in a strainer with few cups of water twice drain completely and keep aside covered to soften.

  3. Wash and break baby spinach into small pieces

  4. Chop onions, tomato and potato into small pieces.

  5. Heat a pan and roast peanuts, almonds and dry coconut one by one and keep aside.

  6. Heat oil in the same pan and fry jeera, slit green chillies and curry leaves.

  7. Add onions and fry till it turns pink.

  8. Add potato pieces, salt and turmeric pd into the pan and saute for a while.

  9. Cover and cook till the potato softens and done.

  10. Add chopped tomato and spinach to this and saute it till it becomes tender.

  11. Sprinkle some salt on the soften poha and mix it lightly with a spoon or hand and separate the lumps.

  12. Add the soften poha to the onion and potato mixture, mix it well.

  13. Sprinkle some water and cook it covered on slow flame till done.

  14. Taste it and add more salt if needed.

  15. Remove from heat and squeeze half a lime ( optional ).

Garnish with chopped coriander leaves, roasted peanuts, almonds, coconut, or any nuts of your choice. You may also top it with some farsan ( sev ) and serve with some pickle.
