Spinach rava dosa is a pancake made from a batter of rice flour, semolina and wheat flour flavoured with spinach and spices.
INGREDIENTS
1 cup Rava / semolina
1 cup RIce flour
1/2 cup Wheat flour
2 tbsp curd / yogurt
1 1/2 tsp Salt or to taste
2-3 Green chilli
1 inch Ginger, grated
2 tsp Jeera /cumin seeds
Few Curry leaves,
Few Coriander leaves
2 onion
A handful tender Palak / Spinach
7 cups Water
Oil / ghee for cooking
METHOD
In a large mixing bowl take rava, rice flour and wheat flour.
Add curd, salt and 3 cups water.
Whisk and mix well making sure there are no lumps.
Add finely chopped chilli, curry leaves, coriander leaves, spinach / palak leaves and onion. Add grated ginger and cumin.
Add remaining 4 cups water and prepare a watery consistency batter.
Rest the batter for 20 minutes making sure the rava has absorbed water.
This will improve the quality of dosa
Mix well making sure the batter is thin watery consistency.
Heat and grease a nonstick tawa / dosa tawa
Carefully pour the dosa batter over very hot tawa.
The technique is little different from that of making regular dosa here you just pour the batter it will spread on it's own.
Lower the flame and cook until the dosa turns golden and crisp.
Brush with some oil
Serve spinach / palak rava dosa immediately with coconut chutney.
COCONUT CHUTNEY
Coconut chutney is one of the tastiest chutneys ever. It is made by grinding coconut, green chillies, ginger and fried gram dal with water to a fine paste. It is served with dosa, idli, vada etc
INGREDIENTS
1/4 Coconut
6 - 8 tbsp Phutana / fried gram dal
2 Green chillies
Few coriander leaves
Few curry leaves
Few mint leaves optional
A small piece of ginger or 2 cloves of garlic
Salt
METHOD
Wash all the ingredients clean.
Put them in a chutney pot and grind with little water.
Add some more water to adjust the consistency and remove in a serving bowl.
Serve with Spinach / Palak rava dosa.
