PODA PITHA/ RICE AND LENTIL CAKE.

This is a traditional rice and lentil cake cooked in a pan.



Serves: 4


INGREDIENTS


  • 3 cups rice

  • 1 cup urad dal

  • 1/2 cup sugar or to taste

  • 1/4 tsp salt.

  • A pinch of baking powder

  • 6-7 cashew chopped

  • 6-7 cashew split into 2

  • 1 tbsp raisins.

  • 1/4 cup clarified butter or desi ghee.


METHOD


  1. Soak and grind rice and urad dal separately, mix together in a bowl and set aside for 4-5 hrs. It should be thick batter.

  2. Heat ghee in a nonstick pan

  3. Mix the baking powder sugar, chopped cashew, and raisins into the batter.

  4. Pour this into the pan.

  5. Garnish with sliced cashew

  6. Cover with a tight lid.

  7. Cook on low to med flame.

  8. Check if a stick comes clean, shows it is cooked.

  9. Remove on to a plate.

  10. Slice and serve.
