Spicy okra is a combination of onions, tomatoes, mixed spices and okra/ bhindi to create a lip smacking Indian delicacy.
INGREDIENTS
500 gms Okra/ Bhindi,
1 large Tomato chopped
1 large Onion chopped
1/2 cup chopped coriander for garnish
1 tsp Coriander powder
1/2 tsp Turmeric powder
1/2 tsp Kashmiri chilli powder
1/2 tsp Salt
1/2 tsp Jeera / cumin seeds
2 tbsp Oil
METHOD
Wash wipe dry and cut bhindi into 1/2 inch pieces.
Heat oil in a wok / pan.
Season with cumin seeds.
Add chopped onions, fry till transparent.
Add chopped tomatoes.
Add coriander pd, chilli pd and turmeric pd and mix well.
Add the okra.
Cover with a lid for 5 mins.
Add salt.
We add salt later as okra turns sticky if salt is added early.
Cook till okra is soft and done.
It should remain green.
Garnish with coriander leaves.
Serve hot with Parathas, Rice as a side dish.
