Bitter gourd / Karela is a rich source of vitamins and minerals. Various anti-oxidants and anti-inflammatory compounds are present in bitter gourd. It helps in lowering the bad cholesterol levels and diabetes. It strengthens the immune system, improves respiratory health, boosts skin health and contains anti-ageing properties. This sweet and sour bitter gourd dish is quite tasty and has a unique flavour.

INGREDIENTS
2 Karelas / bittergourd
1 tomato
1 onion
1/4 tsp chilly pd
1/4 tsp turmeric pd
salt to taste
Little jaggery
Little tamarind
METHOD
Wash the karelas / bitter gourds.
Cut off the top and 'tail' of each karela and then slit vertically down the center.
Scoop out all the seeds from the center with a spoon and discard the seeds.
Cut the karela halves into small pieces.
Chop onion and tomato into small pieces
Heat oil in a frying pan and fry onion till transparent.
Add tomato saute well.
Add chilly pd, turmeric pd, karela and saute it.
Add 1/4 cup water and cook on low flame till done.
Add some jaggery and tamarind pulp and mix well.
Cook for 3 - 4 min and transfer it into a serving dish.
Garnish with coriander leaves.
Serve with chapati / phulkas.
