This dish is a variant of scrambled eggs. It is cooked with onions, spices and some greens. Adding greens increase its nutritional value.
INGREDIENTS
4 Eggs
3 medium onions
2 Green chillies
1/2 tsp salt
A pinch of Turmeric pd
Handful of Methi / Fenugreek leaves
Corriander leaves
2 tbsp oil of your choice
Pepper pd
METHOD
Finely chop onions, green chillies and methi / fenugreek leaves.
Break the eggs and add to a bowl.
Whisk the eggs well with little salt, pepper pd and set aside.
Heat oil in a pan add chopped chillies.
Add onions and fry till transparent.
Add salt turmeric pd, methi leaves and fry well.
Now add the whisked eggs mixture and mix them well with onion and methi.
Keep stirring the eggs until they are scrambled well.
Switch off the heat once they are cooked well.
Serve with chapathi or bread.
