ANDHRA MUTTON BIRYANI IN A JIFFY

INGREDIENTS


  • 500 gms Fatless mutton on the bone

  • 1 1/2 tsp ginger garlic paste for marinating mutton.

  • 750 gms Basmati rice.

  • 1 large Onion chopped.

  • 1 inch Ginger piece chopped.

  • 6 cloves Garlic chopped.

  • 3-4 green Chillies chopped.

  • 1 cup Coriander leaves chopped.

  • 1/4 cup Mint leaves chopped.

  • 3-4 Curry leaves.

  • 2-3 tsp Coriander powder.

  • 3/4 tsp Cumin powder.

  • 1 tsp Pepper powder.

  • 1 Tomato chopped.

  • 1 cup Oil

  • 1/2 Lemon

  • 4 Cardamoms

  • 6 Cloves

  • 2 Bay leaves

  • 1 inch Cinnamon


For Garnishing

  • 2 Onions sliced and fried

  • Corriander leaves

  • Mint leaves


METHOD


  1. Marinate mutton with ginger garlic paste,salt and pepper.

  2. Heat oil in a pressure cooker.

  3. Season with Bayleaf, Cardamom, Cloves, Cinnamon.

  4. Add sliced onions and fry them golden brown.

  5. Grind 1 onion, ginger , garlic, green chillies, mint leaves, coriander leaves, curry leaves, corriander pd, cumin pd, pepper pd into a paste.

  6. Add this masala paste and tomatoes.

  7. Add the mutton.

  8. Stir till well roasted.

  9. Add 1/2 cup water and pressure cook till done.

  10. Par boil rice in a deep wide pan till 3/4 th cooked.

  11. With 1tsp salt and 2 tsp oil.

  12. Squeeze juice of 1/2 lemon while boiling the rice.

  13. Strain this rice in a colander.

  14. In the same pan heat 3/4 cup oil.

  15. Fry the sliced onions, keep aside.

  16. In the oil add Bay leaves, Cardamoms,Cloves, Cinnamon,

  17. Peppercorns.

  18. Layer the rice with mutton and then rice.

  19. Top with fried onions, coriander and mint leaves.

  20. Close the lid and cook till done.

  21. Mix well before serving.

  22. Serve hot with tomato onion raita.
