KHICHDA

Khichra / khichda is made up of lamb, broken wheat, rice, lentils and spices, slowly cooked to a thick paste. It is a super healthy one pot meal relished by all.




Serves: 6 - 8


INGREDIENTS


  • 1 1/2 kg Mutton

  • 250 gms Broken wheat / dalia

  • 50 gms / 5 tbsp chana dal

  • 50 gms / 5 tbsp toor dal

  • 50 gms / 5 tbsp moong  dal

  • 50 gms / 5 tbsp urad dal

  • 50 gms / 5 tbsp Masoor  dal

  • 50 gms / 5 tbsp rice

  • 5 tbsp ginger garlic  paste

  • 11/2 tsp chilly  pd

  • 2 tsp coriander pd

  • 1/2 tsp turmeric  pd

  • 6 Tomatoes

  • 1 Cup curd

  • 6 Onions

  • 2 green chillies

  • 1 lime

  • 5 Cardamom

  • 4 Cloves

  • 1 inch Cinnamon

  • Coriander leaves

  • Mint leaves


METHOD


  1. Wash and roast broken wheat in a tbsp ghee/ oil .

  2. Pressure cook this with enough water for 30 mins.

  3. Thoroughly wash the rice, chana dal, masoor dal, toor dal, moong dal, urad dal and soak them separately in water for about 30 mins

  4. Chop onions, tomatoes, coriander leaves, mint leaves and keep  aside.

  5. Puree tomatoes and spices.

  6. Golden fry onions drain and keep aside.

  7. In a pressure cooker heat oil add slit green chillies, ginger garlic paste, chilly, coriander, turmeric pd, salt and tomato puree.

  8. Saute well add mutton and cook till oil separates.

  9. Pressure cook for 15 minutes.

  10. Add 3/4 fried onions to cooked mutton add lime juice chopped coriander and mint leaves mix well.

  11. Reserve 1/4 onions for garnishing.

  12. Pressure cook chana, toor and masoor dals together with water for 10 min.

  13. Pressure cook moong and urad dals together with water for 10 min.

  14. Pressure cook rice with 2 cups water for 5 miñ.

  15. In a big vessel mix all the dals, rice, broken wheat and mutton khorma.

  16. Mix it all well adjust the consistency, salt and chilly and cook together on slow flame .

  17. Garnish with coriander, mint leaves, lime and fried onions.

  18. Serve hot as a one pot meal with onion raita and jalebi.
