PRAWN PULAO

Prawn pulao is made by cooking rice along with prawns, onions, tomatoes, ginger, garlic, and spices, this prawn pulao or shrimp pulao is a simple and flavourful recipe.


Serves : 6


INGREDIENTS

  • 1 kg medium size prawns

  • 500 gms jeera rice /any biryani rice

  • 2 tbsp ginger garlic paste

  • 1 tsp chilly pd or to taste

  • Salt to taste

  • 1/2 tsp turmeric pd

  • 1 tsp coriander pd

  • 4 - 5 tomatoes

  • 2 green chillies

  • 2 bay leaves

  • 2 -3 cloves

  • 2 -3 cardamom

  • A small piece of cinnamon

  • 1/4 tsp jeera seeds ( optinal )

  • A handful coriander leaves

  • 10 tbsp oil or less

  • 1/2 a lime


METHOD

  1. Wash the rice and soak in water for 20 minutes.

  2. Devein, clean and wash the prawns thoroughly. ( You can squeeze some lime before washing to remove the smell ).

  3. Marinate with salt, 1/2 a lime and turmeric, little chilly pd and keep aside for 1/2 hr

  4. Slice onions and deep fry them to golden brown and keep aside

  5. In the remaining oil add ginger garlic paste, chilly pd, turmeric pd, coriander pd and tomato paste fry it well till the oil separates.

  6. Add prawns and mix it well fry for few minutes till they are well coated with the masala add the fried onions ( leave some for garnishing)

  7. Add 1/2 - 1 cup water and cook it covered on slow flame till half done . It is a thick gravy. Remove floating oil in a bowl and use it to garnish the pulao.

  8. Simultaneously in a big vessel parboil rice with a lemon peel and salt 75% done, drain and keep aside.

  9. Layer par boiled rice with prawn masala/sauce and then rice. Garnish with fried onions, oil from the sauce and coriander leaves and seal the cover and cook on slow flame till done. You can add 3/4 cup of water in the middle ( make a hole in the center) so that it doesnot stick to the bottom.

NOTE:

You can also make this pulao in a pressure cooker if you wish.

Prepare the prawn gravy as per instruction in the pressure cooker.

Check the prawns when half done and gravy dries up completely add water ( Generally proportion of rice and water is 1:2 ) and bring it to a boil, add rice and salt, mix well check the salt and chilly to taste and close the lid and steam it for 5 min on low flame after the first whistle. Switch off the stove.

When the pressure releases then open and serve this pulao with onion salad
