Tandoori pomfret is generally baked in a tandoor but here
the same is grilled in a pan and smoked to give the same flavour.
Serves 2 - 3
INGREDIENTS
2 Medium sized fresh and firm pomfrets. Make slant slits on the body.
11/2 tbsp ginger garlic paste
1tsp Kashmiri chilli powder
1/4 tsp cumin powder
1/4 tsp turmeric powder
3/4 tsp salt or to taste.
A pinch of tandoori food colour
Mix all of the above in a bowl and make a paste.
You can use ready tandoori masala too.
Mint and coriander leaves for garnish.
1 small onions sliced into fine roundels.
2 tbsp oil
METHOD
Clean and wash pomfrets.
Marinate the pomfret with the masala paste ( ginger - garlic paste , turmeric, chilly, cumin pd, salt and tandoori colour ) and keep aside for 2-3 hrs.
Heat oil in a pan, fry the pomfret one by one.
Remove in a serving dish.
In a small steel bowl place a burning charcoal
Place this bowl in the middle of the dish. Cover the dish. To smoke the fish.
Remove this bowl with coal.
Garnish with mint and coriander leaves and onion roundels.
Serve hot with paratha/ naan/ kulcha or pulao.
