CARAMEL CUSTARD

Eggs, milk, and sugar combine to make an easy caramel dessert that's baked in a pan kept inside another pan of water in the oven.



Serves: 4


INGREDIENTS

  • Half litre milk

  • Half cup sugar powdered or castor sugar.

  • 3-4 tsp sugar to caramelise.

  • 5 eggs.

  • Vanilla essence 1 tsp.

METHOD

  1. In a non stick pan heat the 3 tsp sugar with 1 tsp water to caramelise. Take care not to burn the sugar.

  2. Quickly transfer this into the bowl where you will set the pudding.

  3. Roll the bowl to spread the caramel at the bottom of the bowl.

  4. Heat milk to a bit more than warm consistency.

  5. Beat the eggs mix in the powderd sugar bit by bit ( 1 tbsp) at a time. Mix well.

  6. Now add the warm milk bit by bit and keep stirring or the eggs will curdle. Add 1 tsp Vanilla essence or cardamom powder if you dont have vanilla.

  7. Keep aside for a while

  8. Now pour into the oven proof bowl.

  9. Pre Heat the oven to 180 C

  10. Now place this bowl with the custard in another container containing water halfway to the custard bowl.

  11. Transfer this to the oven and bake for 25 to 30 mins or till set.

  12. Remove and set for 3 to 4 hrs in the refrigerator and not the freezer.

  13. Turn over onto a plate. Enjoy.

NOTE:

  1. You can also make it in a pan. Cover the bowl with airtight lid.

  2. Place a paper towel in the pan, place the pudding bowl on it pour water in the pan. Cover the pan with a lid cook on medium heat till the pudding is set, transfer to the refrigertor to chill.

  3. Turnover into a dish. Enjoy chilled.
