Vegetable cutlet is a quick snack made with mix vegetables like potatoes, peas, beans and carrots. They are served with some green chutney or any dip.
Serves: 4
INGREDIENTS
4 medium potatoes
2 onions
8 - 10 beans
1 carrot
1 / 4 cup green peas
Few sprigs of coriander leaves
1/2 tsp Jeera / cumin seeds
Salt to taste
1 green chilli or to taste
4 slices of bread
Oil for frying
1/4 turmeric pd
1/4 chilli pd
1/2 lime
Garam masala ( optional )
METHOD
Peel and wash potatoes.
Chop into four and pressure cook them till done keep aside.
Grind fresh bread in the mixer and keep aside. ( bread crumbs )
Finely chop onions, vegetables, chilli and corriander leaves.
Heat 1 tbsp oil saute jeera / cumin seeds, grated ginger and turmeric pd.
Add onions, green chilli, salt, black pepper pd and vegetables saute till half done and crunchy.
Add little garam masala ( optional )
Cool it down and add mashed potatoes, lime juice, chopped coriander and 3 - 4 tbsp bread crumbs or more ( for binding ).
Mix it well and make a dough.
Taste and check for salt and chilli
Take a little dough and flatten it in between your palms and make a cutlet, roll it in the bread crumbs and keep aside.
Make all the cutlets and keep in the fridge for a while in an airtight box.
Heat oil in a frying pan and shallow fry them till crisp and nice.
Serve hot with tomato sauce / mint chutney / dip.
NOTE : These cutlets can be stored in the freezer for few days and fried as and when required.
